Rename eglot-update to eglot-upgrade

* doc/misc/eglot.texi (Getting the latest version):
Update the reference.

* lisp/progmodes/eglot.el (eglot-upgrade): Rename from
'eglot-update', as discussed on emacs-devel, in line with
'package-upgrade'.
